Color seal in commercial cafeteria / kitchen

Anyone try color sealing something like this?. Will the cs hold up in a greasy kitchen?

I cleaned and clear sealed last week and the she's not happy with the results. She knew in advance what the outcome may be. I thought it was a great improvement, I had to use a portable due to access.
