same as a wooden cutting board, I'd guess?

soap 'n water
food grade mineral oil to keep it from drying out and splitting

to get gouges or slicing/dicing cuts out

Don't use it as a cutting board. Don't let stainy things sit on it. Treat it sort of like marble or other soft stones.

I have two wood-plank bathroom countertops, one Acacia and one vertical grain fir, because I'm a trendy idiot. Both stained and spar varnished so I don't have to worry about someone leaving a wet towel on them. I don't know if I'd top-coat in a kitchen where hard-bottomed stuff gets slid around, just oil is probably better.

Willy's not allowed with sharp objects..

If it's beat up/cut up already, or you just want to make "new" again, Willy, it's a sand and refinish

I did some googling on acacia.
It's damnhard, moisture resistant, and has some antibacterial properties.

good looking wood, too

Clean with a neutral detergent and leave it alone.
I was under the impression it won't absorb oils.
For stains just scrub more and let dry. Maybe use a higher alkaline for stubborn ones.
I've been taking care of a deck floor and steps for about 7 years or more.
